Ingredients:
- 1 lb of your favorite pizza dough
- ½ cup barbeque sauce
- 2 cups shredded mozzarella cheese
- 1 cup cooked diced chicken breast
- ¼ cup thinly sliced red onion
- 1 sliced jalapeno
- Cilantro leaves for garnish
Method:
- Preheat oven to 500⁰F.
- Thirty minutes before cooking the pizza, put your pizza stone on the middle rack in the oven. If you do not have a pizza stone, skip this step and use a cookie sheet when baking pizza.
- Stretch out pizza dough using your hands in a circular motion, then lay on a floured surface and flatten out using a rolling pin. You want to get the dough about 12 inches in diameter. Place dough on a floured pizza peel to make transferring to oven easier.
- Once your dough is flat, use a spoon and spread the barbeque sauce, leaving a ½ inch border around the edges. Top with mozzarella cheese, diced chicken, red onion and jalapenos.
- Slide pizza onto the pizza stone using your pizza peel. Cook for 14-15 minutes until the dough is golden and the cheese is melted.
- After the pizza is cooked, take it out of the oven and garnish with fresh cilantro. Cut into slices and serve immediately.

Notes:
- Instead of a pizza stone or cookie sheet, a round pizza pan with holes works well too.
- Don’t stress if your pizza is not round, sometimes mine are rectangular, oblong, all sorts of shapes. This is the beauty of homemade pizza!
