Ingredients:

1 bunch asparagus, chopped
2 red bell peppers, chopped
½ a head of cauliflower, broken up into florets
Dried herbs such as thyme, rosemary and oregano, about 2 teaspoons total
Kosher salt and freshly ground black pepper
¼ cup avocado oil

Directions:

1. Preheat the pizza oven for about 45 minutes.
2. In a large bowl toss the vegetables, herbs, salt, pepper and avocado oil together
3. Put the vegetables into an oven safe saute pan and place the pan in the pizza oven.
4. Every 3 minutes take the pan out using an oven mitt and stir the vegetables.
5. Continue doing this till the vegetables and nice and browned and cooked through.
