September 30, 2019The weather has started to cool down but that does not mean put the grill away just yet; it only means one thing – football season! With football comes tailgating and delicious game time food. Everyone wants to grab a bite, sip on something and mingle with the crowd. What better way to do this than with delicious grilled wings?
Grilled chicken wings are an easy way to pack a lot of punch and flavor in a small bite. I wanted to create something different than traditional buffalo wings. That’s why I decided to go with my favorite combinations: chili lime and sweet and spicy Asian wings. I prefer to grill my wings. By grilling your wings, it allows the marinade to caramelize onto the wings. With the caramelization comes that great smoky flavor and smell that will draw everyone your way. The greatest part about these two recipes is the fact that they’re quick and easy, which results in less time away from watching your favorite team play. Both marinades can be thrown together in less than five minutes and can be grilled in minutes, which allows more time for your tailgating festivities without standing over the grill the entire time.
The chili lime is made up of chili powder, lots of lime juice and lime zest, and a dash of honey to complement all the acid and spices. The chili lime wings pair perfectly with a cold beer. The sweet and spicy Asian wings were inspired by Korean flavors using Gochujang, sesame oil, rice vinegar, garlic and ginger. Gochujang is a Korean chili paste that has the perfect combination of savory, sweet and spicy. This red chili paste is jam packed with a lot of umami flavors, making these wings out of this world (and my personal favorite).

Spicy and Sweet Asian Style Grilled Wings
Ingredients:
3 pounds chicken wings
¼ cup soy sauce
¼ cup Gochujang (Korean chili paste, can sub Sriracha)
2 tablespoons rice wine vinegar
2 tablespoons honey
1 tablespoon sesame oil
3 tablespoons minced garlic
3 tablespoons minced ginger
Directions:
1) Begin by making the marinade. In a blender, place all ingredients, except the chicken wings, and blend until smooth.
2) Reserve about ¼ cup of the marinade for dipping wings after they are cooked.
3) Take the remaining marinade and pour over wings. Make sure the wings are covered completely. Cover and allow to marinate in fridge for at least one hour, but no more than two.
4) Pre-heat grill to medium-high heat.
5) Once grill is pre-heated, place wings onto the grill and cook for 8 minutes per side with the lid closed; flip and cook for another 8 minutes, or until internal temperature reads 175⁰F. Remove and enjoy with the reserved marinade, if you choose.
Note: Due to the sugars in this marinade, the wings will caramelize much faster; do not be alarmed if they look more charred than normal.
