Roasted Potatoes

Ingredients
- 1 pound baby potatoes
- ½ cup olive oil
- 1 bunch fresh parsley, finely chopped
- Salt and pepper to taste
- ½ cup grated parmesan cheese
Directions
- Preheat the pizza oven for 40 minutes.
- Preheat pan for 10 minutes in the pizza oven
- Cut baby potatoes into quarters and add in a large mixing bowl
- Add olive oil, parsley and salt and pepper to potatoes and mix.
- Add potatoes to preheated pan and cook for 20 minutes, constantly stirring
- Take potatoes out and top with parmesan cheese, cook for another 2 minutes till cheese is melted and browned.
- Enjoy!
Veggie Calzone

Ingredients
- 1 – 16 oz ball of prepared pizza dough
- 1 head of broccoli, cut into small florets
- ¼ cup olive oil
- 1 yellow lemon
- 2 cup shredded mozzarella
- 2 cup whole milk ricotta cheese
- 2 tsp red pepper flakes
- 1 bunch fresh basil leaves
- 1 egg
- Salt and pepper to taste
- Store bought or homemade marinara sauce
Directions
- Preheat the pizza oven for 40 minutes.
- In a skillet add the broccoli, olive oil, salt and pepper. Put the skillet in the pizza oven and roast for 8-10 minutes , take out and allow to cool.
- Add 2 cups of ricotta cheese and 2 cups shredded mozzarella to a mixing bowl.
- Add chopped fresh basil, red pepper flakes, salt and pepper, and zest of lemon to the cheese mixture.
- Add in cooked broccoli
- Dive the dough into 4 even balls.
- Stretch the dough into an 8 inch circle, fill half with cheese filling. Brush the edges with egg wash and fold over to create a pocket.
- Egg wash top of calzones so they brown in the oven.
- Cook in the oven for 5-6 minutes until golden brown, make sure to turn consistently.
- Serve with marinara sauce and enjoy!
Shrimp Scampi

Ingredients
- 1 pound peeled and deveined shrimp, 16/20 size preferred
- ¼ cup olive oil
- ¼ cup unsalted butter
- ½ cup dry white wine, such as pinot grigio
- 2 cloves garlic, peeled
- 1 teaspoon red pepper flakes
- ¼ cup fresh parsley, chopped
- 1 lemon
- 1 loaf of crusty bread
- Salt and pepper to taste
Directions
- Preheat the pizza oven for 40 minutes.
- Preheat pan with 3 tablespoons olive oil and ¼ cup butter for 10 minutes in the pizza oven
- Add in two garlic cloves, red pepper flakes, salt and pepper to pan and put back in oven for 5 minutes
- Add ½ cup white wine to pan and reduce by half in the pizza oven
- While wine is reducing, chop parsley and prepare lemons for garnish
- Once wine is reduced add in shrimp and cook for 2-3 minutes per side
- Put bread in the pizza oven to heat up while shrimp cooks.
- Once shrimp is cooked, squeeze over lemon juice and fresh parsley
S’mores Cookie Bake

Ingredients
- 1 cup butter
- 2 ½ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon kosher salt
- 1 cup brown sugar
- ¼ cup white sugar
- 1 large egg, 1 egg yolk
- 2 teaspoons vanilla extract
- 1 cup marshmallows (mini or regular size)
- ½ cup graham crackers broken into small pieces
- 8 ounce semisweet chocolate (you can use chocolate chips, chocolate chunks, chopped chocolate etc)
Directions
- Preheat the pizza oven for 40 minutes.
- In a medium saucepan, melt the butter in the pizza oven, stirring and swirling the pan often, until the butter foams, turns golden brown and smells nutty, about 5 minutes. Pour into a large bowl and set aside to cool.
- In a medium bowl, whisk together the flour, baking soda, and salt. Grease your cast iron skillet with cooking spray or softened butter
- Add the sugars to the melted brown butter; mix until combined. Add the egg, egg yolk and vanilla extract and stir until combined. Add the flour mixture and stir until well combined.
- Stir in the chocolate and graham cracker pieces. Then pour into the prepared pan.
- Bake for 15-18 minutes, rotating constantly until the edges are browned but the center is still gooey. Take out and top with marshmallows, bake for another 3-4 minutes till marshmallows are gooey and melted.
- Top with ice cream and enjoy!
