Spicy and Sweet Asian Style Grilled Wings
Ingredients:
3 pounds chicken wings
¼ cup soy sauce
¼ cup Gochujang (Korean chili paste, can sub Sriracha)
2 tablespoons rice wine vinegar
2 tablespoons honey
1 tablespoon sesame oil
3 tablespoons minced garlic
3 tablespoons minced ginger
Directions:
- Begin by making the marinade. In a blender, place all ingredients, except the chicken wings, and blend until smooth.
- Reserve about ¼ cup of the marinade for dipping wings after they are cooked.
- Take the remaining marinade and pour over the wings. Make sure the wings are covered completely. Cover and allow to marinate in the fridge for at least one hour, but no more than two.
- Preheat grill to medium-high heat.
- Once the grill is preheated, place wings on the grill and cook for 8 minutes per side with the lid closed; flip and cook for another 8 minutes, or until internal temperature reads 175⁰F. Remove and enjoy with the reserved marinade, if you choose.
Note: Due to the sugars in this marinade, the wings will caramelize much faster; do not be alarmed if they look more charred than normal.
Chili Lime Grilled Wings
Ingredients:
3 pounds chicken wings
2 tablespoons honey
2 tablespoons vegetable oil
2 tablespoons chili powder
2 teaspoons salt
1 teaspoon garlic
3 limes zested and juiced
Directions:
- Begin by making the marinade. In a blender place all ingredients, except the chicken wings, and blend until smooth.
- Reserve about ¼ cup of the marinade for dipping wings after they are cooked.
- Take the remaining marinade and pour over the wings. Make sure the wings are covered completely. Cover and allow to marinate in the fridge for at least one hour, but no more than two.
- Preheat the grill to medium-high heat.
- Once the grill is preheated, place wings on the grill and cook for 8 minutes per side with the lid closed; flip and cook for another 8 minutes, or until internal temperature reads 175⁰F. Remove and enjoy with the reserved marinade, if you choose.
BBQ Chicken Pizza
Ingredients:
1 lb of your favorite pizza dough
½ cup barbeque sauce
2 cups shredded mozzarella cheese
1 cup cooked diced chicken breast
¼ cup thinly sliced red onion
1 sliced jalapeno
Cilantro leaves for garnish
Directions:
- Preheat the oven to 500⁰F.
- 30 minutes before cooking the pizza, put your pizza stone on the middle rack in the oven. If you do not have a pizza stone, skip this step and use a cookie sheet when baking pizza.
- Stretch out pizza dough using your hands in a circular motion, then lay on a floured surface and flatten out using a rolling pin. You want to get the dough about 12 inches in diameter. Place dough on a floured pizza peel to make transferring to oven easier.
- Once your dough is flat, use a spoon and spread the barbeque sauce, leaving a ½ inch border around the edges. Top with mozzarella cheese, diced chicken, red onion and jalapenos.
- Slide pizza onto the pizza stone using your pizza peel. Cook for 14-15 minutes until the dough is golden and the cheese is melted.
- After the pizza is cooked, take it out of the oven and garnish with fresh cilantro. Cut into slices and serve immediately.
Notes:
- Instead of a pizza stone or cookie sheet, a round pizza pan with holes works well too.
- Don’t stress if your pizza is not round, sometimes mine are rectangular, oblong, all sorts of shapes. This is the beauty of homemade pizza
Brie Burgers
Ingredients:
6oz Ground Beef Patties
Arugula
Brie Cheese
Mayonnaise
Red Onions
Balsamic Vinegar
Brioche Buns
Salt / Black Pepper
Directions:
- Preheat Trellis Burner™ on the grill to medium-low heat with the hood closed for 15 minutes
- Slice the red onions and place into a deep pan with olive oil at the bottom
- Place onto grill and cook for 20-25 minutes while continuously stirring
- About 15 mins into caramelizing the onions, drizzle in about 2-3 tablespoons of balsamic vinegar
- As the onions are finishing up, place patties onto the grill and season with salt and pepper
- Flip burger patties after 4-5 minutes depending on how you like them cooked.
- Once you flip, place the slices of Brie on and close the hood, let the cheese melt and the burgers finish cooking, about 3 minutes.
- Toast your buns on the grill for 1-2 minutes, spread both sides with mayo, and top with a cooked patty, grilled onions, and arugula. Enjoy!
